MOINK Balls: The Perfect Blend of Meat and Smoke

Ingredients and Supplies:

For the MOINK balls:
o 500 grams of ground beef
o 18 slices of smoked breakfast bacon
o 40 grams of grated Parmesan cheese
o 2 teaspoons garlic powder
o 1 egg
o 75 ml milk
o 50 grams of breadcrumbs
o 2 tablespoons Italian herbs
o 1 tablespoon freshly ground black pepper
o 5 tablespoons of your favorite BBQ Rub
o 5 tablespoons BBQ sauce

o BBQ with lid
o 18 cocktail sticks
o Sauce mop
o Smoking wood

1. Put the minced meat in a bowl and add the egg, milk, Parmesan cheese, garlic powder, Italian herbs, pepper, salt and breadcrumbs. Mix everything well and roll equal balls of about 50 grams each.

2. Sprinkle the BBQ rub on a plate and then roll all the meatballs in it. Choose your favorite spice mix or make your own unique rub!

3. Wrap a slice of bacon around each meatball and secure with a cocktail stick.

4. Put the MOINK balls in the fridge and preheat your BBQ. Make sure they cook indirectly: for a kamado use a platesetter or heat deflector, and for a gas BBQ leave one of the burners off. The temperature in the BBQ should be around 120 °C.

5. Once the BBQ is up to temperature, add the smoke wood to the burning coals. Place a few chunks between the coals so that they burn slowly and give off delicious smoke.

6. Place the MOINK balls on the indirect part of the grill grate and close the BBQ with the lid. Let the balls cook for 45 minutes. Check the temperature every now and then, but open the lid as little as possible.

7. After 45 minutes, take the MOINK balls off the BBQ. Coat them all around with BBQ sauce and place them back on the indirect part of the grill.

8. Let the balls cook for another 15 minutes, after which they are ready. Serve the MOINK balls on a plate with the cocktail sticks in it for extra convenience. Enjoy!
