Pizza stone

Want to know how to make those irresistible pizzas on your Kamado? The secret lies in the pizza stone! This stone heats the pizza from both above and below, resulting in that perfect, crispy crust. To achieve this, use a multilevel lift, heat shield or plate setter, and a standard rack with the pizza stone on top. Place the heat shield at the bottom and the standard rack on the highest level of the lift. Without a heat shield, the bottom of your pizza will burn immediately!

Before placing the pizza on the pizza stone, sprinkle some flour or cornmeal on the stone. This prevents sticking and shows when the stone is hot enough. Wait until the flour slowly turns brown, this is the sign that your pizza stone is at the right temperature (at least 300 degrees!).

Here are some tips for baking the best pizzas on your Kamado:

Start with a clean Kamado: Remove any ash residue and small charcoal pieces for optimal oxygen flow and temperature.

Choose the right charcoal: High-quality Marabu charcoal is perfect! It reaches temperatures of up to 700 °C and burns for about 4.5 hours, which is ideal for baking pizzas.

Make sure you have a preheated pizza stone:
If the pizza stone is not hot enough, the dough will stick to it. Temperature between 350 and 400 °C is ideal.

Limit temperature loss: Keep the Kamado as close as possible during baking. A pizza needs 5 to 10 minutes to become nicely brown and crispy.

Various toppings:
Vary your toppings! Start with tomato sauce, but olive and garlic oil are also great bases for fish or seafood pizzas.
